Pure Pina Colada

Thirsting for a summer drink without the sugar or alcohol? This is a refreshing and healthy alternative drink to the Pina Colada. There is only pure fruit and electrolytes.

Ingredients:

  • 1 young Thai coconut (water and pulp)
  • 1/2 fresh cut pineapple
  • 1 cup ice

Directions:

Just blend one young Thai coconut (water and pulp) with 1/2 fresh pineapple and some ice for the ultimate fruity indulgence.

Veggie Sushi

Want a quick and easy snack? This Veggie Sushi is full of invigorating fresh flavor. You don’t need to be a sushi chef to quickly roll a veggie roll!

Ingredients:

  • sliced veggies of spinach, carrot, cucumber combo
  • sliced avocado
  • fresh mung bean sprouts
  • 1 sheet of Nori seaweed wrapper

Directions:

1. Just place the ingredients on one end of the seaweed and roll it up.

2. Hint, dab the edge with a little water to make the roll stick and dip the knife in water before slicing the roll into 4-6 bite size segments.

3. I like to dip them in a little dish of lemon or lime juice mixed with sesame oil.

Zucchini Cornbread

 

1 C yellow cornmeal (freshly ground)

1 C grated zucchini

1 T honey or agave

 

Mix and fold in

2 eggs whites beaten or replacer

¾ C boiling water

Bake 400-25 mins

1/4 Cup millet

1/4 Cup Flax Seeds

1 Cup boiling

FilteredWater

1 tsp Kelp

1 Tbs Currants, Gogi Berries, or Blueberries, etc..

Grind Millet

Add 1 Cup FIltered Water

Simmer 5 mins

Hot Breakfast Porrige

Whatever the weather is where you live, we know you’ll enjoy this delicious hot breakfast porridge. The stevia and vanilla flavoring make it taste more like a dessert, but it’s a very healthful way to start your day (especially if you add the flax seed oil).

Ingredients : makes 2 large bowls or 4 smaller servings

2 cups water

1 cup quinoa flakes

¼ tsp. sea salt

1 tsp. cinnamon

12 drops stevia liquid concentrate

1 Tbs. organic butter or coconut oil

2 tsp. vanilla flavoring

1 tsp. flax seed oil (optional but very healthy)

  1. Bring water to boil in a 1-quart saucepan over medium-high heat.
  2. Add next five ingredients. Cover and reduce heat to very low. Simmer for 10 minutes.
  3. Remove from heat and allow to cool slightly before adding vanilla flavoring and
  4. flax seed oil.

Blueberry & Buckwheat Pancakes
